I don't like Emmenthaler precisely because it's slightly sweet.
My favourites are St Agur (with funny blue/green mould but very tasty! Packaged in green and cream box in a wedge shape), Truffellino (soft, round, truffle-flavour-filled cheese) and Napfkohlerkaese (tasty semi-hard cheese, slightly smelly).
Emmenthaler only is to be consumed with some good mustard (Dijon-Thomy or Colman's)
or with branston pickle

I complain a lot about rights, politics and taxes, but I loooove local food stuff.
I was last weekend at the Aargauer Weinmesse in Brugg and I found cheese.
It looks boring, but it’s one of the creamiest cheeses I’ve tasted. It’s made from buffalo milk in canton Aargau, Käserei Berglinde in Buttwil. No strong smell or flavor, just endless creaminess. The winter is about to end, but still on time to enjoy this delicious cheese. Also, the cheesemakers are super kind.
So, any suggestion from local cheeses?
PS. I was pleasantly surprised with some wines from Aargau, will post about them later after I taste them again at home.
