Overnight aromatic brine and then cranberry butter under the skin.... Oh yeah. I fear I'm going to have a very disappointing christmas this year at home!
I brined my turkey last year. first christmas to stay away from the parents. The thing cost me 130 CHF, being organic, not in demand, and the like.

I noticed the other day that the fancy butchers in Geneve had turkeys in the window .. 44chf per kilo!
Fine and good but they still had the head and feet attached.. Part of the 44chf per kilo i wonder
Yeah. I saw one in globus for the same price, without the head and feet. More than 160 chf for a 4 kilo turkey? Crazy!
Are they really going to be better than the ones Migros have? I doubt it. Crazy.
I don't doubt that rearing style/diet plays a massive difference in the taste of a Turkey.

I don't listen to the Archers, I just prefer the taste!
I much prefer a fresh turkey to one previously frozen. However, my first preference is for a capon - but with two people, a good chicken makes most sense.
I found that precious recipe for X-mas turkey ....
For anyone who’s near an Aligro they have fresh turkeys this week for 9.90 a kg. 2 to 10 kgs in size.
