Current/upcoming scarcity of several cooking fats

I actually got that recipe from my friend's mother (who is French). It is also excellent as a side sauce for steak and potatoes. It reminds me of a much improved American blue cheese dressing.

EU palm oil use has been stable-ish for the last decade at ~6.8mln tons. Two decades ago its consumption was also stable, though at around 2.8mln tons only. The increase by 150% in the decade from 2003-2012 to ~6.8bln tons was entirely caused by the introduction of biofuels.

Nowadays almost two thirds of EU’s palm oil use gets burned (i.e. the entire increase of 150% mentioned above). A bit more than half is burned in ICE vehicle motors aka for transport, another ~12% to generate electricity and heating.

But hey it’s renewable therefore green and totally environment-friendly.

My favorite at the moment is a hot Ayvar and avocado dressing, with a dash of balsamico, salt, pepper and maybe a few herbs.

In fact this is on for tonight ́s tea:

Green salat, bell peppers, cucumber, tomatoes, onions radish, Mozzarella cheese slices. The basics.

Then, got half a chicken from the Brater yesterday, that is going to be shredded and mixed into the salad.

Maybe a glass of a light red wine with it.

She doesn’t.

She is in Hunenberg, near Sins and is small production. I interviewed her over 10 years ago and asked her to show/tell me how they work. All their crops are for the animals and they are happy.

She also gives me special cuts that one might not find here, and spectacular bacon. I get brisket, and I specialize in cheap cuts, log slow cooking, I get short ribs, mignon, goose fat, pork fat, beef fat, bones for stock, trotters ++ … all with the glorious fat on.

You should count yourself lucky it's olive oil , if only you knew the amount of sun oil that is blended and flavoured to become olive oil !!!!!

If only it was only sunflower-oil....

Naturally the Greeks say it’s better than the Italy’s own production...

Air fryers are starting to make a lot more sense when you consider how much cooking oil is just thrown away.

Air fryers don't use much power, either, so it's a win-win. There's a handy table I found which compares power needed for the oven (loads) and microwave (very little) - air fryer next one up from microwave but I'm technically inept and can't copy/paste it to my post.

I got a 40 Euro air fryer from Aldi and use it quite often. Can ́t do everything with it, but chicken and chips... brilliant.

Veggies, mushrooms, the lot, just don ́t try brie, trust me on this.

Even baked bread in it.

You can cool it, filter it and use it again.

We have a Tefal Oleoclean that has a filter system for cleaning the oil. Works very well.

Think of it as an opportunity to go raw food vegan or similar. Like the pandemic it forces you to be creative and try new things.

Oil, when consumed with vegetables/salad helps absorption of many of the vitamins in them.
