Do eat Gruyère from now on too. The American market for that was big and they won’t be able to afford it anymore (I hope they will MISS it badly and they’re all Trump voters).

So, this is one of those threads that took some turns. But it stuck to food, that’s remarkable.
I had some dry bred and decided to make a bread pie with that Aldi “applebutter”.
I used absolutely no sugar, no butter, just the bread, the milk it got soaked in and eggs. It turned out fine. But it was STILL sooooooo sweet! Is Aldi out to kill me?
However, that’s that with Aldi applebutter or any “Gourmet” spread for me.
Wonder if it’s gonna take an other 15 years for me to enter an Aldi? Although actually, all fruit and veggie were fine and definitely cheaper than Migros.

Mora Aldi and it’s sugar attack.
When I took the wrong turn last week and walked into Aldi (I’m actually half expecting someone to come along and reprimand me “nobody shops at Aldi, silly”) I bought a jar of Pad Thai Paste. I was all about Tamarind and anchovies and yes … about being lazy.
This time I checked it before I used it: 40g sugar in a 100g paste!
Now WHAT EXACTLY is that sugar doing in there ???
Don’t take my word for it (the jar is 113g)
The reason I went for that is because I’ve been looking for Tamarind paste in like for ever and I know it exists, I used to use it … when I was very young. It should be available at least in Thai shops, no?

try indian stores - they are much more likely to have both the sour paste and the sweet varieties (with seeds, which can be easily removed).
I have. At least the ones I frequent don’t have it. I know this is strange, my online-Indian doesn’t have it either.
edit: I went on amazon but they don’t deliver here it seems. Then I had a hunch and went to Galaxus. They got it! How crazy is that.
I’m sorry, I missed this. I am in Lugano this week, not cooking. I am surprised you could not find it somewhere like Asiaway, but their Indian stuff is sometimes scant.
Galaxus certainly has an odd assortment of stuff. Glad they had it. Another place to check is the Indian market a block away from the hb in Winti - tandoor or something. Or dalchini.ch - physical store in dietlikon. Another place is chefstore.ch

yep, one of my places to go. Last time I asked they didn’t have it.
I had about a kg of jazz apples going bad and I used this recipe to make apple butter in my instant pot.
I halved the recipe and used maple sugar, added ground cloves, ginger, cardamom plus cinnamon and a vanilla bean. I used my immersion blender to mash it up and right now it‘s concentrating under the sauté function.
Pretty good, might be a bit sweet. Will cut the sugar.
Good use of extra apples!
Maple sugar is expensive but it has a lower glycemic index and I like it. You could also use maple syrup. Or regular sugar.
It‘s nice to have small batches I can freeze in small quantities.
