I'm learning german, will probably get it up to a B2 level, but won't be able to use it in a professional work enviroment (technical words and all that stuff), how big of an issue will that be?
It's very likely that I will do my masters in St.Gallen, but I would like to do an internship next to it to finance my rent/tuition fees. Is that possible in Switzerland? To find a 20-25h/week internship next to uni, and what salary can I expect? Most sites I check usually say 3-5k a month for finance/data analyst intern roles, how realistic is that?

I don't think it would decrease your chances of finding a job. Employers here know the max is 15 hrs/week for students and are probably accustomed to dealing with it.

Not really. Working hours for junior positions are also limited by the availability of mentors. There's no point that you work 60 hours a week if it's not well aimed, quality control, etc.
Just for perspective, an intern/trainee starts next January at my work. The worry is finding meaningful work for this person. Everyone in the office is quite busy with their own work and working with the trainee are non-billable hours.
So, just go with the flow. 15 hours, if the work is really interesting you may volunteer a bit more. But consider that you could be literally doing archiving, translations or any other sort of admin job no one wants to do. What's the experience in doing that 40 hours a week?

That is true! I noticed that too during my internship in Hungary, I technically work 25~ hours a week, but I only get tasks for about 10-20hours, the rest I sometimes automate some excels for learning experience or just get paid to do nothing (thank you home office). I guess 15 hours spent on proper tasks are better than this, less time wasted for everyone
