Glutenfree Pizokel

150g Buckwheat flour

150g Corn flour

1 tsp Salt

mix.

1 Tbsp Oil

4 - 5 Eggs ()

0.5 - 1 dl Water or Milk (in total about 3dl liquids)

mix and add to flour mix.

Not tried. May not work or taste horrible.

I've bought fresh many times here, I've even been given a choice of with or without feathers.

As this is a recipe for 'Spätlze' and not 'Spätzle', and Pizokel is 'a Pasta speciality from Graubünden which reminds one of Spätzle', this is one recipe I am not goiing to try out on my friends. Maybe on my enemies. Plenty of them.

Isn't Schönholzer at the Saturday Market in Wädenswil? He has a lot of different Game and other tasty animals.

Yeah, the local market is good here.

There are two butchers stalls at the market. I've seen game but not pheasant at them. They also do fantastic local lamb.

I refuse to pay 8 CHF a piece for imported quail at the market when I can get 4 for 8 CHF at Bettio in the Seedam center.

The fisch stall, Zahner, has excellent local perch and for imported fish, the best cod I've had here but that's a bit off topic as the Swiss around here are a bit squeamish around fish unless it's fried to death in bread crumbs so it's hardly a unique Swiss food.

I should come up the lake. Get some Alp Tritt Cheese, and this Perch you are telling me. Won't make Chnusperli out of it, promised. The fishmonger in Altstetten has, if you are early enough, always some nice Bachforellen.

PS: You should have seen the old Bettio at Gasiplatz.
