Odile, which lactaries species you mean? indeed some are bitter, but Lactaire délicieux I think is very tasty, one of my favourites. Try it in breadcrumbs and fried.
I know, many love them, and the Italians adore them - I just don't... but glad to know you enjoy them. Each to their own and often based on what we learnt in childhood - my father wouldn't pick them and said they were no good! Just checked in my Jura mushroom book and it says 'species of mediocre taste and not often picked in the Jura, but prized in the South of France'- so there you are
This weekend found a patch of shaggy manes (or shaggy ink caps) near Zurich. Also came across what I believed to be Liberty caps (spore print and other traits match), but certainly reluctant to eat. Anyone with similar finds? And where, in Zurich, can one go for a confirmation of ID -- I've heard pharmacies do it. Thanks.
In Zurich city you can have the mushrooms controlled at the Pilzkontrolle in Walchenstrasse 31, one tram stop from the HB. There are other Pilzkontrolle around the lake.
Just remember that there are cantonal rules and limits of when and how much you can pick up - e.g. max one kg per person allowed, not allowed in the first 10 days of the month.
Check local rules as they can vary.
