OP - I don't think you will get anywhere complaining officially. But you yourself might feel better. I'd have opted for driving them there with stops on the way, if I were you, instead of having a 1yr old baby exposed to recycled plane air, considering the pandemics. And how long it actually took, in the end, anyways.
In my experience the solutions are not even offered and have to be found oneself.
Sure, OP can complain. But if it really annoyed them, it will only prolong the annoyance.

You have a good point here. Driving distance between 2 airports is 4hrs which already exceeds 3hrs limit by European directive.
But, there is one subtle issue - covid.
EU forces airlines to reduce services and I bet this can be qualified as extraordinary circumstances

Just a bit older than 1 year and a bit bigger than 13 kilos.
The airline has a duty of care. They are primary legally responsible for hte discharge of that care.
However, I always deal with these issue myself and then bill the airline. I've never not been paid for my expenses. I never ask for, or expect, compensation.
Now, I don't know how other airlines are but EasyJet seem to deliberate confuse claiming compensation with expenses. They're two quite different things. So you need to be careful with exactly what you're claiming for.
