Quick & healthy family recipes using easily available ingredients

The Chile con Carne thread from a few days ago yielded some nice recipes, too.

She (I assume it's a women who runs the site) has some other nice recipes.

My typical potato-stew looks like this:

- 1 kg of potatoes (peeled and cut into chunks not bigger than ice-cubes)

- a couple of sliced carrots (1kg would be too much, unless you really like carrots)

- an onion (chopped)

- other veggies as you like (green beans work pretty well)

I briefly saute everything in large pot, then add water and veggie broth and let it simmer until it's ready. Pepper as needed. If you use instant-broth, not much salt should be needed.

Adding fresh, chopped parsley adds a lot of value to this dish.

Obviously, the smaller your potato-chunks are, the thinner the carrot-slices should be.

If you like meat, you can add sliced sausages towards the end or add boiling meat at the beginning.

Also nice is a mushroom-risotto (found here at http://www.chefkoch.de/rezepte/65744...lzrisotto.html but actually translates ok-ish via GT).
