Iāll second Birch sugar as a substitute in baked goods - I really canāt taste any difference, in fact I think that some of my recipes turn out better using it.
BUT BUT BUT there is a huge caveat for folks like me. Xylitol is quite toxic for dogs, and unfortunately I canāt count on my OH not to absent mindedly offer a taste of his morning muffin to a begging mutt. So if you have dogs and a poorly trained OH
then excercise caution. And know the signs of xylitol toxicity so you can take action asap.
Another option for baked goods like cakes and muffins: Apple sauce. My own, so a no-added sugar. My James Grieve apples are quite sweet, I can skip the sugar in many recipes, or at least cut it by half or more.
