Please bear in mind that butter chicken is quite a different recipe, different ingredients and different techniques. I'm not sure a stewing chicken would work as these take hours to cook.
As you are aware, butter chicken is marinated in yogurt, lemon, aromatics & spices, then grilled/roasted and finally added to a sauce which is made of tomatoes, butter and cream. Fortunately, I've never had mushy chicken when I've made butter chicken with a normal broiler.
Perhaps you're marinating it for too long? Are you grilling/roasting before adding to the sauce? I'm interested in finding out why it came out mushy.
Yes. Thank you. I've made butter chicken a few times now both with whole chickens and with just the breast.
I'm guessing that the marinade is perhaps either too strong or I let it marinade too long. The recipes says to marinate over night, which I never do but i leave it some hours. But perhaps it's still too long.
I usually cook it in the oven before adding it to the sauce. I find that the texture breaks too much for some reason.
They didn't have this type of chicken at the Coop today. But I'll keep looking and perhaps go ahead and leave it marinate over night. Well, I won't be able to experiment if I can't find the stewing chickens!
Thanks for explaining your method. I normally marinate for between 1-2 hours, no longer. Breast only: 1 hour, joints on the bone: 2 hours. I also use very little yogurt. Finally, when I grill/roast, I do it at a pretty high heat so that the chicken is only half cooked, but has developed a lovely charred crust on the outside. I finish the cooking in the sauce.
I get my suppenhuhn from Migros as it's the closest megastore to where I live. Best of luck in finding one.

It's odd that they suggest marinating for so long. But now I'm very curious if it will work with the stewing chicken. I'll have to check out the Migros. Maybe I'll do it over the weekend.
Then when this comes out disastrous, I'll make your recipe.
