I know the second number (50) is the tire height.
Looking for winter tires I only find 185/60.
Likely going to buy online with wheels, so want to get it right the first time.

Best to check in the instruction manual which other sizes are permitted. From what I found in the internet, 185/55 R15 is also allowed. Could be an option if you need to buy the wheels anyway.
Just read the car manual. There are 3-5 tire sizes compatible with the design of the suspension and steering of any car. No more. Follow that guideline and no worries.
What do you have for a rig?
Depending upon the auto maker's specs, usually, one can go down an inch to 15 and somewhat not so wide with winter tires. With thinner tires one tends to have better traction on slippery roads. However, one also has to get an extra set of rims, which is also the norm.
That I'm afraid is a really bad idea, to put "higher" tires on the same rim. Besides not being road legal and with a high chance of voiding insurance, putting 185/60 on a car meant to use 180/50 on the same R16 rim implies:
- 20% increase in sidewall height, a positive thing only in off-road
- 6% increase in overall wheel diameter, affecting your speed readout: 60 km/h actual speed will be 63.8 km/h
- higher weight, changed scrub radius - negatively affecting handling, fuel consumption and tire wear
You should check the OEM specs for other tire & rim combos and stick with those as a 2nd set. Most manufacturers have at least 2-3 sizes to choose from.
I can recommend the Continental Conti-WinterContact TS 860.
It's not.
It is the aspect ratio, so the 50 means that the height is 50% of the width.
155/60 should give you the same height.
Recommended sizes will be in your used manual, and in the driver side door jamb.

Tom - I'd be surprised if an insurer would not be looking out for these when there's a significant payment to be done ... or for such a mod to be road legal when it cannot pass the MFK.
But then again, I'm not saying you're not right on the letter of the law, they're known for "inconsistencies" and I've not actually checked :-)
