That bed seems simple. Just take out the seats and built it with wood. Wood may weigh a bit more and look clunkier, but it's an easier material to work with. No welding needed, wood can be assembled with nuts, bolts and glue

Good point. I once saw a YouTube video of someone who built all the units of his converstion in a modular fashion. The only permanent installation in the van was a sturdy frame into/onto which he could attach each unit. That way, none of it was built-in, and he always passed the roadworthy certification. He had the benefit of his van being much lighter and lower on fuel while he was using it at home, and he knew how to bolt things (the modules, then classed only as "luggage") down with only a short-ish enough amount of work, all sturdily enough, whenever he wanted to use it as a camper.
