Weird stuff around permit process

Before going to the question, a bit of a background (sorry for such long message):

I am a Masters student at the University of Lausanne, already in my last semester. I lived 8 months in Lausanne, then I did a cantonal change to St.Gallen due to my exchange semester there, also stayed around 8 months there. Since this is my last semester, in my program this semester is fully dedicated to an internship and master thesis. So, when I was in St. Gallen, I started to applying for internships. I got an offer in Zurich, and my employer applied for a work permit, as I am non EU citizen, but internship is mandatory, there were no problems, in a week got approval letter from my employer. I started the moving process, moved to Zurich registered in local community office. All went well, and I also did a cantonal change as my student B permit was still valid. Normally, in cantonal change you get the permit in 10 days, what I was also told in local community office.

However, already to months passed and I already had two calls to the migration office, not saying anything, just wait. Then recently received a letter: they want more documents, also few personal questions like what I am doing in Zurich, what I am planning to do after graduation, and needed to show them my bank statement with sufficient amount of funds. I mean, wait a sec, I got a work approval, but they don’t know what I am doing in Zurich? So weird to be honest, I wrote a letter and gave them all the documents, even few more. Now the tax authorities sent me some tax information that I need to show. Does this means that process is slowly but going forward? Cause like I have no clue why so long, it was just a regular cantonal change. Any thoughts? Thanks for your time guys!

What kind of approval letter did your employer send? With non EU, as you kniw, it is the authorities that have to grant the permit.

So I have received a document: Stellenantritt (containing my details and company details) and it also contained this paragraph from Migrationsamt:

Die vorliegende Verfügung berechtigt nur zur Ausübung der darin bezeichneten Tätigkeit. Ist zur Ausübung des Berufes eine gewerbe- oder gesundheitspolizeiliche Bewilligung oder eine ähnliche Ermächtigung notwendig, muss sie zusätzlich eingeholt werden. Diese Verfügung erlischt, wenn die Stelle nicht innerhalb von drei Monaten angetreten wird. Ist mit dem Stellenantritt in Wechsel der Wohnsitzgemeinde verbunden, hat die Abmeldung bei der alten Wohnsitzgemeinde und die Anmeldung bei der neuen Wohnsitzgemeinde innerhalb von 14 Tagen zu erfolgen.
