(I have run a search and read the gf threads)
Where can I buy guar gum? I have tried globus (no joy) and the reformhaus where I for a guaram powder. Is guar gum a powder or a "gum"?
Also where do people buy their glutenfree flour? I buy the coop one but was just wondering if anyone has found any good suppliers out there that they have had better success with in baking.

According to Wikipedia it is a powder In German it is apparently called Guarkernmehl
I think that is the stuff in the reformhaus so.....it was called guaram rather than guar gum.
Unfortunately all the flour I have used here for GF baking has made a glue like paste. Cakes turn out like dry rocks and cheese sauce for lasagna turns into concrete.
I make my own flour mix.
Chickpea flour (Kichererbsenmehl) can be found in Indian stores (cheaper than the Reformhaus), it has good "sticky" properties and helps to keep baked goods moist.
Ground almonds or hazelnuts give a nice flavour to the mix and add protein.
If you can tolerate rice flour it helps with making the baked goods fluffier. I usually mix in some potato starch or tapioca starch, arrow root flour, or whatever else I can find, because hubby can't tolerate rice.
You really have to play around with it a bit, until you find the best mix for whatever you are trying to make. I have had good luck with soda breads and muffins.
