I would love to make the Wensleydale scones form the latest Olive magazine but have no clue about the cheese, I reckon I will have to substitute the Wensleydale with a local cheese.. I could use Gruyere but does it come close enough? I have never had Wensleydale hence my dilemma Any suggestions ?

Contact Grumpygrapefruit. I think he has Wensleydale cheese. If he does't, use Caerphilly as a substitute, and I know that he definitely has Caerphilly.
The british cheese stand at the Zurich HB markets on Wednesday a couple of weeks ago definitely had Wensleydale...
I use grated cheddar in cheese scones - tasty, strong cheddar. Nom nom.
