the only car that's managed to turn my head in the past few weeks is an old school sierra sapphire cosworth, not too many of them left in the world.
as for hyper cars - meh - way too many of them here for them to be special.
I live in Zürich, There are just to many special and great cars driving around in summer. Better have a lifestream near Bürkliplatz.

I've had my head turned by a number plate.. BL 1, which is almost always on a Renault.
Its owned by the Keigel Brothers from Garage Keigel in Frenkendorf and sometimes for a laugh they'll put it on a clapped out, 10 year old Clio which they use for making deliveries.
My old housemate owns a Mercedes 560 SE. Only about 1200 of them were made.
Pretty cool car and built like a tank. His "other" car is a 68 Mustang Pony. :P
Something to turn my head would be a 1950s/60s Ford/Dodge/GMC Pickup. Not a lot of them around town unfortunately.
You should book a holiday to Sweden, the amount of old American cars on the countryside is outrageous (especially in certain areas, where Americana has grown out to be a huge and popular subculture.)
I definitely need to. I did see a fair few of them in Prague, of all places.
I've seen one here so far (a white and cyan 50s GMC Pickup, IIRC) which was parked outside the Yonex Badminton Hall in Hardbrücke.

Agree... there are so many hyper-cars nowadays that they are not unique anymore, at least not here... and they have no history, is just something that goes fast without any sort of history nor pedigree... just to yell everybody that you have cash and silently screams PLEASE LOOK AT ME, JUST PLEEAAAASE!
