Anywhere to buy Rillettes, or Paté de Campagne in or near Zurich?

I was just in France for the first time and was loving the availability of various food items. One was the many different Rillettes, Patés, Terrines, Foie Gras etc. Especially for me it was nice to see at least >30% of these products did not have WHEAT or DAIRY in them. Here in Switzerland I don't think I have found a single Terrine that does not have Milcheiweiß or Rahm in it.

I could always make trips to France and bring back and freeze. Or learn how to make my own.

Here is my list of things I would love to find:

1. Rillettes (of any animal or fish)

2. Paté de Campagne (I could even find this in the supermarket in the US, but haven't seen it in CH)

3. Terrines or liver patés without dairy or gluten

4. Reasonably priced Foie Gras in larger quantities (was around 16 euros for 180g in France. Globus has it obviously but very expensive and not any better IMHO)

5. Reasonably priced fish eggs / roe .. trout or salmon or other (In Seattle there was a Russian Grocer / producer of seafood which I used https://www.red-caviar.com -- Russians know that Fish roe is a normal food while most Americans call Fish roe "caviar" and think of it as some extraordinary delicacy that couldn't possibly be a normal part of someone's diet)

6. Grass-fed beef tallow (Globus has "Wagyu Bratfett", not likely grassfed but at least it is not too overpriced) ... not a French thing just something else I like to buy.

7. Galettes (100% buckwheat / Buchweizen / farine de blé noir / farine de sarrasin) although I can probably just learn to make these myself from Buchweizenmehl from Alnatura.

8. Any good sources of Mackerel or Sardines or other fatty fish

I need to go back to Globus again and make sure they don't have Rillettes or Paté de Campagne but I'm pretty sure they don't.

Also does anybody here make pilgrimages to France and stock up on food, and know the rules or any clever tips for doing so?

You mean I can't expect to eat high-quality specialty foods whilst putting in no more effort than your typical college student when it comes to food??

Actually if I were willing to spend more money I might indeed-- I imagine if I went to a Charcuterie place I could probably special-order to have them make a large batch of one or more of these, to my specifications.

Learning to make my own would probably be a worthy goal. Raw ingredients for most are probably pretty readily available here in ZH, except of course the Foie Gras, which might still justify the occasional trip to France in my estimation.

I'm not sure about sourcing meats for Rillettes etc. It looks to me like Rillettes are typically at least 50/50 fat/protein by weight, so that may also require special ordering extra fat-trimmings from the butcher, or rarer cuts.

I was just hoping someone knows where to buy some.of these in ZH as I don't usually spend much time preparing food at home.

You'd probably have more luck in the French-speaking side of Switzerland where they are more adventurous with their food.

Coop sells fish roe (trout) and others in small jars at a reasonable price.

Foie gras is readily available here, as is pork.

Goose fat less so, but is reusable, so I keep it in the freezer.

Can I ask where? I've only seen foie gras at Globus and the selection was very limited (small amounts, expensive). Or are you talking about actually buying the raw fatty livers from the butcher's counter?

I normally buy only the fresh, raw liver.

Maybe that’s the case.

Pork rillettes are easily available in coop, Migros and Manor here as are rillettes de thon (tuna) and saumon (salmon).

There is also a reasonably good choice of pâtés and terrines in Manor too.

Oh I didn't know Manor had grocery also. I've been in the Manor in Zurich, but it looks like the closest "Manor Food" locations are Baden & Rapperswil, using -

I found that Berg und Tal im Viadukt has some swiss-made beef tallow and pork liver paté.

All this is easy to make at home, same for duck or goose confit (similar to making rillettes).

And the ingredients are quite cheap.

That reminds me, I have a goat pluck or two in the freezer, as well as a few kg of goose fat.
