Apple pie craving

Hi guys!

So I'm pregnant and I've been having a very weird craving: apple pie!! It's weird because I'm portuguese living in switzerland and I only ate it once or twice in my life, but somehow it's not apple tart or apple strudel that I'm craving, it's apple pie!!

Do you guys have any good recipe you could teach me? I'm desperate!!

I have made apple pie long time ago.. and it's not too difficult.

you need to make the pie crust dough first. Just mix flour and tiny bit of salt and cold butter (make sure it's still hard) and put them all together and make the dough and once it's ready, put it in the fridge for an hour.

meantime, you can cut apples and put them into a pan. butter, a spoonful sugar, a little lemon juice (half lemon and squeeze) and a little nutmag and cinammon.

Take out the dough and make them flat and put it into a round pan for the crust. put these apple on the crust.

bake.

you can make a apple crumbles if you don't want to make the pie crust.

search apple pie recipe. you will find a lot. it's not hard but take some time.

Doesn't it? .......... it used to pass something off that was labelled as such, but I have admit to seldomly eating eating it - and never here.

This recipe looks like what I remember making with my mother and grandmother - one of the "issues" with this though is it doesn't explain how to make the crust, if you wish to make it from scratch.

So the MD apple pie was not that great, I am trying your recipes!!

It is important to choose the correct apples. You probably won't find the classic

Granny Smith apple here, but maybe use a firm sour apple, like a Braeburn.

The secret to the heavenly apple pie that Grandma used to bake is the flaky, tender crust.

And the secret to a flaky, tender pastry crust is lard.

I haven't been able to find a good lard in Switzerland, so I limit my pie making to trips back to Hoosierland.

(I came to pie making late in life. Oh how I wish I had paid better attention when previous generations of family pastry magicians were still around to share their secrets... )

Butter crusts are good, too. You can also do a mix of butter and lard. But I grew up with a certain taste, and that's what I wax nostagic over and seek to replicate.

As for the apples - you really do need a tart firm variety.

I could make one for you but you are a tad too far...also I need my apple trees to give me some apples but this is not that important.

You can find lard here, but it is sold in very large tubs.

Personally I like to used Bratbutter, which is in every large Migros. It's similar to Ghee and is found in the shops with the olive oil, not with the butter.

I really like a butter crust. But what I like even better is crustless with a top - somewhere between a cobbler and a crisp.

A good apple for any cooking is Boskoop . Not really for raw eating as it is high in acid, including ascorbi acid.

Hmmmm, apple pie.

I love baking a good pie, though I don't have an oven available where I live now. But my favorite hint for added perfection is to peel the apples first, and boil those peels in just enough water to cover them. Add a couple of your desired seasonings (like lemon juice, nutmeg) to this mix while it heats, and if you like nuts, then this is when you'd add almonds, walnuts, or your choice.

Meanwhile the chopped up apple pieces are in a big bowl with the sugar and rest of the ingredients. After the peels are boiled, carefully remove the peels and get rid of them however you like. The water/nuts that are left, you pour into the big bowl with the apple pieces, and mix well. Add some flour if you'd also like some soft little dumplings baking inside. Don't wait long before pouring the whole thing into the crust, covering with your top crust, and baking.

I don't know what it is about it, but the apple peel water just seems to add an extra delicious element whenever I make pie.

Uau!! Now I have to bake another apple pie!! yay for cravings that don't go away!!
