Best/favourite vegetarian cookbook?

I really want to get away from eating a lot of meat and am a bit sick of boring meat, two veg and potato/pasta/rice dishes and cook something more exciting for my family. What's your favourite vegetarian cookbook? The dishes should be interesting, not just substituting meat, but still reasonably easy to prepare.

It's getting on a bit now, but it's full of good, interesting recipes with nice clear instructions.

"New Vegetarian Kitchen" by Nicola Graimes is our favourite recipe book at the moment.

Cookbooks are a funny thing in my life - I have many, but never use them. I like cookbooks that tell stories about the recipes and encourage tweaking them to one's personal tastes or fridge/cupboard contents. I read cookbooks for inspiration and loosely memorise recipes, then on the spot in the kitchen just do what feels right. No one has ever complained How does the saying go "anything that took me more than 45 min to cook should take more than 5 min to eat"

We recently acquired Veggiestan and are loving it very much. Nothing tops Middle Eastern food in my (cook)book.

The Classic 1000 Vegetarian Recipes by Carolyn Humphries is also excellent with plenty of variety, from weekday dinners to dinner-party recipes (and plenty of puddings )

Sounds familiar! But between new babies (yes, plural) and trying to inspire a four-year-old to enjoy food as much as I do, I have somehow temporarily lost all motivation and enthusiasm to cook something more than same old same old.

The replies here have given me lots of ideas though and I've already ordered a couple of the books. Hope they will get me back on track, fingers crossed!
