Hello, I have a craving for beef braised short ribs. My butcher speaks very little English. What is the cut of meat called in German for this dish? The literal translation in Google is "Kurzen Rippen"
Try "Querrippe" or "Spannrippe". Beef cuts in different countries are a bit different but imho, that part confers best to short ribs.
or "Rinderrippenstück", perhaps?

I believe it is called "Rindsvoressen" (there isalso Kalbsvoressen but the pieces are smaller and from theyounger animal) By the way my wife justprepared an excellent Short Rib tonight!
