I bought a very decent pizza oven that allows temperatures as high as 500°C
I was wondering if anyone had experience buying fresh pizza dough from restaurants or other artisans for home cooking, preferably in Lausanne or around.
Obviously, it’s quite easy to prepare the dough, but if I can save the hassle, that’s even better.
Thanks!
You can buy fresh Pizza dough in Migros or Co-op. It’s quite good.
Don’t forget, even a lot of pizza places actually buy their dough in from catering suppliers (either chilled or frozen), rather than make it on site.
Maybe have a word with your local bakery - maybe they can supply you some more high quality base?
Kind regards
Ian
A quick google shows that one restaurant sells its pizza dough in a few Migros supermarkets -in the Basel area:
But I’ve just seen that you are in Lausanne!
I find really a pity that you invested in a superbe oven…to cook other people’s food
it takes exactly 5 minutes and zero effort to make pizza base: This recipe makes 4 pizza bases (tip: you can freeze the extra pizza dough!)
400 g bread flour
100 g fine wheat semolina (or durum wheat flour)
300 - 320 g water (depending on the absorption of the flour)
20 g olive oil
10 g salt
1.5 g of dry baker’s yeast (in a sachet), or 5 g of baker’s yeast (in a cube)
In a bowl, mix all of the ingredients. just mix until they are well mixed, you don’t even need to knead
Separate the dough in 4 pieces, (of the size of baseball) and put them in little plastic zip bags.
Forget them in the refrigerator for 2 or 3 days…
And, like magic, time does the kneading for you.
When you take the zipbag out of the refrigerator, you will be able to spread it easily, because time (and yeasts) have made the dough for you!
here you have it… pizza for lazy people… start in minute 6:25 … ROBINFOOD / Pizza para los que nunca harían pizza + Lahmacun
