Buying meat at the Bauernhof

Some weeks ago, we were walking through the village of Walchwil (the riviera of the Zugersee!) and on our way came across a bio farm selling meat. Nothing indicated though on opening hours or anything.

So now that the BBQ season officially has opened, some questions for you...

Do you have any experience with buying meat at the Bauernhof? Any farms you can recommend? Any experience with the bio farm in Walchwil?

Can you just go and order or do you call and pre-order? How about the range of what is on offer?

We have one in Liechtenstein between Balzers and Triesen, it has it's own butcher shop and store. Just past the Tennis place behind a park. You can buy anything there from Turkeys, Chicken to Beef, any cut it seems like.

I recently split 12kg of bio angus beef from a local farmer with a coworker at 32 Sfr. a kilo for a mixed bag of vacuum sealed cuts. (ground beef, siedfleisch, a roast, geschnetzeltes, voressen, saftplatzli, platzli a la minute, tenderloin, hohrucken) Plus, free kidneys, heart, liver, marrow bones. I'll definitely be doing it again, but I have to do it advance as there's specific dates where they slaughter just one steer, age it for quite a few days, and then send it off to the butcher to be cut and vaccumed.

Before that I've had good experiences buying sausages and specific cuts of beef from a farmer in Uster.

So eventually called the farm in Walchwil on Friday to check what kind of meat is on sale.

The meat is only sold at specific times during the year:

- June: porc

- September: beef

There is no real option to choose the meat you want. They sell bags of 10kg with a mixed variety of meat, all is packaged in separate portions and it is vacuum sealed (I guess similar to what Principia Discordia explained).

As I would have to freeze such quantity of meat anyhow, I asked if she had nothing left, to at least get a flavor. And she was able to get me 4.7kg of meat out of her freezer (which I thought was very kind!).

So yesterday, I got the following mix:

- Rindsbraten

- Rinds filet

- Rindsplätzli à la minute

- Rindsvoressen

- Rindsgeschnetzeltes

- Rindshackfleisch

- Sied Fleisch

I don't really see much difference between the Rindsvoressen and Rindsgeschnetzeltes though...

Anyway, price seems very decent, 30CHF per kilo (it is a biofarm, breeding Natura Rind).

The Rindsbraten will be tried this weekend!

Someone might be along to correct me, but Voressen is for stew, and geschnetzeltes is more tender and meant for, what else, Zürcher geschnetzeltes We've also used it with good results in stir frys. I made a damn good pot roast from a hunk of siedfleisch a few weeks ago too.
