Once we rode to Italy, to discover that I forgot to switch plates. Fortunately, we made it home without getting stopped.
Another time, I lost my plate somewhere on an Italian highway, reported it to the local Carabinieri the next morning, and got a new plate the next day. Didn't get stopped, but even if I had, I had the police report (and a cardboard number plate I had made).
And three weeks ago I rode my daughter's bike a couple km with no plate, as she had lost it in the snow (I found it the next morning).
Lastly, a bunch of years ago I had lost a plate somewhere near the local cop station. Went to report it, they had it, but I had to come back at two as they were going to lunch, so I had to ride without it until after lunch!

EDITED to add: That's assuming that the car is properly registered and insured.
I've also driven around with my plates in the boot as I took them off one car and put them in the boot temporarily. And then drove to Zurich airport with them in there.
Nobody even flashed me. It's nothing to worry about, your vehicle has a VIN and you're carrying other information and evidence that you own the car and it's insured.
A lot of cars driving without the plates are unfortunately people moving the car quick who cant be bothered to go and get the tagesschild,think they won't get caught or the rules don't apply to them, they are at this time uninsured.. steer clear of them. The insurance is connected to the plate so one cannot have just picked it up from the dealer without both.
Other than get a tagesschild, if you know a friendly garagiste you can often borrow one of his plates (I have)
