There are some colleges that do short workshops but I can't remember which ones off hand. My GF went on one last year in St Gallen, I'll ask her and come back after the weekend.
Real classes on the other hand exist too but I suspect the organisers might be picky in chosing the participants (also because they're subsidized by the government)– But as long as you know the language and there's space I don't see why they wouldn't welcome you. There's a two weeks, theoretical and practical course called Alpsennkurs about the production of butter, cheese and local specialties, intended for cheese makers (the linked one for canton Valais).
