Chocolate (chip) Muffins

I've sucessfully made these Roger Pizey chocolate custard muffins before:

A big heartfelt thanks for all your answers - Muffin day turned out to be something of a marathon since both major and minor are a bit like the duracell bunnies - once they get started on something they just won't stop, so we tried about 3 muffin recipes and 1 chocolate chip recipe for good measure.

My 13 year old daughter makes these chocolate chip muffins , they are delish, easy and simple ingredients:

2cp flour

1cp sugar

2 tsp baking powder

pinch cinammon powder

1/3 tsp salt

1 egg + 1 yolk

1/2 cp butter or oil

Measure and stir together all dry ingredients. In a separate bowl measure all wet ingredients and mix well. Make a well in the dry ingredients and pour in wet mixture. Mix with a fork until moistened (a few lumps are ok)

Bake in a preheated oven at 175 C for 20 to 25 minutes.

I request these at least once a week. The secret is in timing and my daughters gifted hands.

oops forgot the most important ingredient 1/2 cup chocolate chips.

Fold these into the batter after mixing all ingredients together.
