having searched the 7 or so US cookbooks in my library I have failed to find any chocolate muffin recipe let alone one with Swiss compatible ingredients which I need for minors birthday on Thursday, i.e. I have to bake tomorrow.
Anyone out there with a Dean-and-Delucia type (nope they don't have one either), hang-the-cholesterol ingredients-available-in-Switzerland recipe? Well I would be grateful for a copy.
This might help out a bit...Our blueberry muffin recipe is quite good, and I know you can use the exact method and simply substitute chopped chocolate bits (just use lindt 70% chocolate and chop into pieces) for the blueberries...You can also just use half the blueberries and add half chocolate to make an interesting blueberry-chocolate version (although blueberries are not really in season).
I made these the other day for my son to take into school. They certainly seemed to go down well...
CHOCOLATE ORANGE MUFFINS
250 g butter, room temperature
2 cups sugar - white granulated.
Use an electric mixer to beat these 2 ingredients together until the colour becomes pale.
Whisk in
4 large eggs - one a a time, mixing well between each one.
In a separate bowl measure out
2-3/4 cups flour. I used Zopfmehl by terrasuisse from Migros.
1-1/2 teaspoons baking powder - pulver - in a sachet from Migros
1/8 teaspoon salt
In a jug measure
3/4 cup milk
juice of one juicy orange
zest of one half orange
mix half the flour into the butter mix. then half the milk mix. then half the flour mix, then half the milk mix. Make sense? Mix in 1/4 packet chocolate chips (Backwurfel - in a soft sachet style packet also at Migros)
Spoon into muffin cases - I made 20 from this mixture. Bake 170 degrees C for longer than you would think - mine took 30 minutes - may be the oven?
Icing - Melt half a pack of butter and one bar of chocolate over a saucepan of hot water. Once it is all melted stir until smooth and leave to cool until thick enough to spread over the cakes. Sprinkle with more choc chips.
Well actually cooking is a form of exercise. All that going up and down the kitchen, mixing up ingredients that dont want to be mixed, bending over to check the muffins being cooked.. that is serious exercise you know! And what about all the fluids you loose by drooling just thinking about them? And dont get me started on the very physical job of washing up!
It comes from the Marvellous Muffins book from NZ. I've made it lots of time here and always comes out delish.
1 3/4 cups flour
1 tsp baking soda
1 cup caster sugar (I just use regular sugar)
1/4 cup cocoa
100 g butter (if I'm feeling stingy or don't have enough butter I substitute the butter for 75ml of vegetable oil and add an extra egg because butter is so expensive here. They still come out great)
1 egg
1 cup yoghurt
1/2 cup milk
1/2 tsp vanilla
1/4 - 1/2 cup chocolate chips
Sift the dry ingredients into a large mixing bowl.
Melt the butter, add the remaining liquid ingredients and mix until smooth.
Add the combined liquids to the dry ingredients and fold together until the flour is dampened, but not smooth.
Divide the mixture between 12 medium sized muffin pans that have been well greased or use paper muffin wrappers. Sprinkle with extra chocolate chips before baking if desired.
Bake @ 200C for 10-12 minutes or until centres spring back when pressed lightly. Leave to stand in the pans for about 3 minutes before removing and cooling on a wire rack.
I just throw everything in the bowl at once and stir a bit. I don't muck around with separating dry and wet. I also like to add some frozen raspberries or/and use berry yoghurt.
My recipe is written in German but I'd send you anyway:
250 gr Flour
1 Sp Natron
1 Pkg Backing powder
125 gr Sugar
1 Egg
200 gr Sauerrahm
50 ml oil
150 Chocolate chips
50 gr melted chocolate
Aroma (Vanille or Rum)
Den Ofen auf 200°C vorheizen. (Nur!) Die Böden einer Muffinform einfetten.
In einer kleinen Schüssel Mehl, Backpulver uns Salz vermischen.
In einer anderen Schüssel Ei und Zucker schaumig schlagen. Dann Öl und Sauerrahm und nach Belieben noch Vanille- oder Rumaroma unterrühren, die Mehlmischung und die Schokostückchen zugeben, nur so lange (per Hand!) rühren, bis die trockenen Zutaten feucht sind. Den Teig auf die Muffinformen verteilen.
Etwa 20-25 min backen.
1 min in der Form lassen, dann auf ein Kuchengitter setzen.
For the chocolate muffins I would buy one Dr Oetkers chocolate cake mixture from the Coop, add 1 egg and 1 saschet baking powder, and add some (Maybe 100 g?) grated chocolate chips.
Get some really thick Gruyère cream, delicious with strawberries!
H, do you want to make Muffins or Cupcakes? Cupcakes are more birthday-like 'cause you frost them and then decorate the frosting with sprinkles and m & m's. and can shove candles into them.
