Chocolate Chips for Cookies

The Felchlin Factory in Ibach (near Schwyz) has the best chocolate, and they sell commercial size quantities of chocolate rounds and chips. I wanted to make chocolate chip cookies when we arrived (in need of some comfort food and something "familiar") and couldn't find chocolate chips... until I discovered Felchlin.

They sell some of the finest quality chocolate in Switzerland. A lot of places that make chocolate truffles and specialty chocolate bars buy their raw chocolate from this factory. I plan on buying a bag of chocolate chips and taking it home with me... Tollhouse huh?

It is amazing the Arriba with 72% cacao is smooth as a milk chocolate. All thanks to 72 hours of conching .

Migros green label are nice and the price is good too.

got some from migros Patissier brand, the chips got to be in square shape rather than little cone shape.. but they did the job..

Is it just me that buys a bar of chocolate and smashes it into chips?!

If nothing else, I will forever be grateful to Switzerland for having a scarcity of chocolate chips in the shops. As a result, I ended up making these rough milk chocolate chunks for the chocolate chip cookie recipe I spent years perfecting. I was initially unhappy to use them until the cookies came out better than I ever could have imagined. I will never use chips again for my recipe.
