Does anyone know where I can buy cooking apples. I have a recipe for chutney that requires 1kg. If cooking apples aren't available could you recommend the next best thing. Thanks
You can't get cooking apples per se, but I use Boskoop apples instead and, like cooking apples they are sourer, with a slightly firmer flesh than normal eating apples. I find they work really well.
Yum, apple chutney!
See also this other thread on the apple varieties in Switzerland.
I don't know if they are still around, but a while back you actually used to be able to buy 'Kochäpfel' (cooking apples) 'cheap'. Be very wary of these. I think they were more likely windfalls, or not-quite-such-nice-looking- specimens but they were certainly not a specifically tart variety like Bramleys. ahhhh Bramleys, those were the days...
I have spare apples that need picking you could have if you are near the Nyon area - not sure as your location is given as France and you could be miles away.
PM if you can collect!
The Swisses love their apples, if some enterprising bod decided to plant a few Bramleys do you think they would buy them? Like you I miss them...
I could swear that the larger Coops carry Bramley apples starting about now - but maybe I am mistaken (wishful thinking, maybe?). I would check the St Annahof Coop or maybe the really large Coop in Oerlikon if you can.
Let me know if you see any, would make the trip if I knew for sure, off topic what about Pork with the skin on? As Jamie would say they are good friends.
On Sunday afternoon we went walking the dogs over near Teufen through the vineyards. After eating red, white and Rose grapes and trying the walnuts that were on the ground everywhere we picked some large green/rosy red apples , no idea of the variety , and returned home. Stewed them gently with lemon juice and sultanas until they turned into a puree. Then put then in a dish coverered them with a UK crumble mix and baked them at 180 deg C for 20 mins.
Pure heaven served with custard.....My girlfriend ,who is Swiss , had never had crumble before was in raptures......
Message -- go out in the countryside and try the local produce fresh off the vine/tree.......
Yum... I just had some apple fritters with a warm vanilla sauce. This is a swiss classic. I believe they used boskoop apples.
