This might sound a bit weird, but after almost 3 years collecting points on my cards, I think I never redeemed the points at any of both.
The question is How do I redeem the points? Can I use them to pay? How/Where/When?

For the Coop you can set up an online account and choose from their catalogue

For the Migros they send you vouchers which you then use to pay for stuff in the shop as though it were cash, but they have Use By dates so yours might need reading to see if they are out of date.
You can also use your Coop points to pay for your groceries. Every week certain items can be paid for with your points - you can find a list on the Coop website, or in the Coop newsletter.
The cashier usually asks if you want to use your points when you have bought a qualifying item.
Additionally, several times a year everything in the store is 'pay with points' - last Saturday was one such day, my shopping cart worth CHF 250 was free! Coop B/H has similar offers.
As far as I know you can only pay for non food items with points at all times, whereas the ability to pay for food with points is limited to certain offers/days/other requirements.
Migros lets you pay for everything (food and non food items) with the 5/10chf vouchers sent (IIRC it's 5chf per 500 points), and they give you vouchers which you can use to get certain items cheaper.

It's limited to certain food items each week and then they have the occasional day when you can buy all your shopping with points. This week chocolate Easter eggs are one of the things you can use your points to buy.
Not precisely - "you can also use your Coop points to pay for groceries" (part before the bolded one) doesn't apply all the time in Coop, as opposed to Migros, hence my reply. But no matter what one uses or doesn't use the points for, OP can be sure the question "Supercard?" will crop up every single time s/he buys something in Coop - it does for me despite me never having owned and planning to never acquire a Supercard
A comment on the Coop SuperCard catalogue. It is a complete RIPOFF. The prices are completely over done.
You are better off using the points for groceries (when offered as mentioned above - the category of products - meat etc. changes) or BETTER in my mind is to translate the points into gift cards at Interdiscount that can be used to purchase something when it is on special. The SuperCard/Interdiscount offers are only a couple of times per year (Coop does a promo where they tell you that you can use the points at ID or at Fust ). If you do not see something you want, you just "buy" the gift cards at ID to use later on.
That's why, if I were to get a card, I'd definitely go for Migros.
If you're an apple-lover, you can buy iTunes gift cards for coop points.
The card is free, so get a card for both - it's 1% off in effect.
Migros also give you a barcode sticker which is much more convenient stuck in my wallet, unfortunately Coop don't and they also don't allow you to use a homemade photo-copy barcode sticker (I know, I got told off in Bau&Hobby !).
Redeeming Coop points varies depending on the store - Coop City cover pretty much any non-food purchases, Bau&Hobby it seems to be pretty random what is allowed.
COOP Points can always be used in COOP City, on all products all year round if you don't want to spend them in the COOP supermarket. We always buy Christmas presents there for everyone. Nice extra saving so around Xmas
You can use the Coop points also in Fust - when buying some items there I was asked for a Coop card, I though points were added to be honest, but he proposed to pay the items with my Coop card - for 1000points you could buy something for 10 CHF It is an expensive conversion, but kinda good one.
For Migros, I don't even know how to check how many points I have :/
I also faced the same problem. Then I found out my card was not registered. I registered the card by calling the helpline and soon received the coupons.
