Probably they know that their cows are smarter than European and they don't get mad, just slightly passive aggressive?
So, has anyone seen a beautiful pink wavy matter at local butcher? Or at least lamb's?
Is it possible to buy calf's brain in Switzerland? I haven't eat it since it was banished from European market because of mad cow disease, but maybe there could be some use from Swiss euro scepticism.
I saw some frozen brains once at the Migros , but not for a while since. I would guess asking a butcher to procure some, would be the way to go. There used to be a traditional wurst made with brain, but it went the way of other not very popular sausages.
