Sadly, no 10Gb/s or 25Gb/s where I live, so I have to make this work with my current 1Gb/s coaxial input.

I am trying to get rid of UPC's modem/router and use my own (I do not want it even as just a modem), but I was not able to find a 1Gb/s converter from coaxial (my wall outlet) to the ethernet of my router.
The “converter” is the UPC modem. Other cable modems such as a FritzBox are not supported. The best you can do is to but the Connect Box in bridge mode and then use your own router.
This is exactly what I mentioned. I do not want to use it as a modem. There are devices like the one I am looking for. Example , but I do not know if something like this will work, for various reasons. This is why I am asking in case someone has actual experience with this type of conversion, and with which device.

Not wanting to accept your Internet Service Provider's line termination equipment (in this case a cable modem/router) sounds odd. No doubt is has also has diagnostics and other proprietary software running on it for network management etc. and is probably personalised with a mac or similar network address.
What are your actual requirements ? wired or wireless within the apartment ? one or more directly routeable IP addresses ?
Anyway, I'd guess that you are stuck with this UPC cable modem/router and, if you don't like its features, do as suggested and use a router of your own choice behind the UPC one.
Of course, you could also direct the question, about substituting some 3rd party coax/ethernet device, to the UPC help desk and see how far you get. Not far would be my guess.

No, these are not the devices you are looking for.
There is mechanical conversion and there is signal conversion, and you need both to make it work.
As an example, you can't just plug any antenna to any radio or TV receiver, the receiver must have the right tuner and decoder.
These devices you have found are able to take an Ethernet cable+signal and inject into a Coax cable with some kind of signal. You need another one of the same type to decode the signal and return to standard Ethernet.

You can use these devices to create your own network recycling the coax cables in the wall, you can't use them to decode UPC signal. Only the UPC modem can.
If you don't want the UPC modem, change subscription to fiber; contrarily to UPC coax, fiber internet is a standard and you can buy any modem you want. Actually, most fiber companies do ask you which modem you want, because they don't have their own at all.
