I like homemade mayo in various flavours: masala, curry, garlic, paprika, natural, cocktail.
I roasted some garlic cloves, squished out the pulp and mixed them them in to seasoned sour cream. Finished it of with a good splash of balsamic a final mix and it went down a treat, best made ahead to let flavours infuse.
Try fresh orange juice, soya sauce and a dash of sesame oil. You could also add garlic and chilli, according to taste.
Enjoy your fondue.
