Food syringe / fleisch spritze....where can I buy one in a shop?

Howdy

Anyone know of any shops in Zurich that sell a food / meat syringe?

I have 5kilo of brisket and wish to cure it for salt beef / corned beef purposes. I've done this before with smaller cuts and not bothered with injecting the cure but think this cut will benefit from it because it's huge and thick.

I've seen I can order online from various places but I don't want to wait. I've had the meat since Monday and pick up my pokelsaltz from the butcher today so want to start the brining today, hence the desire to pick one up from a shop in town and not wait several days for a delivery.

Thanks

Where did you get the brisket?

Tom

Hey Tom,

I have a colleague who cross borders from Germany and picked it up for me.

I am thinking to halve it and salt beef cure one half to slowly boil and smoke the other half on the barrel smoker

I cure, then smoke, but you can also just smoke, two different results.

I got a syringe once at Coop, attached to a bottle of marinade.

Manor, Jelmoli, and Globus sometimes have them. Otherwise try that place by the square across from the Urania Parkplatz... Kitchncook or something like that it used to be called.

Failing that, try a pharmacy for a very large syringe.

Yeah I wasn't sure whether to cure the bit I plan to smoke, need to read up on it s bit more.

Funny enough I saw stubbs bbq sauce sell a marinade with syringe attached online here, just not sure I've ever seen in a shop.

Might just have to hunt around the big coops and possibly globus I am thinking.

Thanks.

Hahaha yeah I was thinking the pharmacy but wasn't sure how readily available they are over the counter

That is where I get mine. I can lend one to you, would you prefer brake fluid, assembly oil, ATF, Loctite, or silicone flavour?

The Stubbs one is only for one use and is pretty rubbish. I bought it in Coop. I bought my current one online from a Weber specialist in Bassersdorf. It was pretty expensive. I've now seen them far cheaper in the BBQ section at Hornbach.

I can find the web address of the place I got mine from if you want to splash the cash?

Yeah I've seen online, varying from 20-100chf, not worried about the cost more that I need it today / tomorrow. Otherwise will have to look at freezing my meat and I don't want to do that.

I do not know if the goal is to make one but, I would be thankful if someone tells how to make a cured smoked pastrami brisket at home ?

I might be on a totally wrong thread btw :/

I use this recipe:

Yes, that's the same one.

You could always cut the meat into smaller chunks, 1 1/2 - 2kg or so.

Otherwise, just brine longer to get full penetration.

Tom

I would call Brunner Eisenwaren in Bassersdorf and ask them if they have one in stock. Failing that call your nearest Hornbach (to save a wasted journey).

Last resort - you may be able to persuade me to loan mine for the weekend.

Very kind of you.

I just popped to the pharmacy and got a huge syringe and two needles that'll do the job for now I think.

Going globus now to see if can find the real thing.

The pharmacy one will suffice as back up if I don't find in globus and I will order a decent one online in the next days.

Slightly off topic.

Throw-away plastic pipettes are really useful too..... my sons are constantly 'borrowing' them from my kitchen drawer when they're tinkering with their Mini motors. OH liberated a ton from his old lab, but I've noticed that I'll soon need to acquire some more.

The pharmacy has big syringes (Ask for Blasensspritzen)

Unfortunately, the needles they offer are limited in size. If you wish to inject liquid butter you need as big as it gets. 10 Gauge or even a 6 Gauge.

Nice pharmacists are happy to order for you. Syringes and needles are normal and usual OTC stuff. People need for all kind of things.

The one from the normal shops are called Bratenspritze (two examples)

Or from German Amazon, deliverable to Switzerland

Probably avaliable from a lot of places.... the link was really just to provide an illustration!

This looks useful.
