guacomole recipe

what is your favorite guacamole recipe? we recently hosted a guacamole contest, and someone brought over my new favorite: a Japanese guacamole:

-avocados

-pressed ginger

-soy sauce

-wasabe paste

-lime juice

-chopped scallions

-pepper

mhhmmm!

We usually mash an avocado, chop some red onion, add a lot of garlic, lime and some hot pepper - usually a bit of powdered chipolte and a touch of salt.

Sometimes we add tomatoes. I know other people add sour cream, creme' fraiche or yogurt.

The soy is intriguing, though - I've been using soy and anchovies instead of salt in a lot of cooking and i like the results..

Thanks to traubert! Totally forgot the cilantro - it's essential in my house! How could I forget? Whack!

I go for the simple, I mash an avocado, put some red onion and tomatoes, I do not like lime juice but I put in a bit which will also prevent the avocado from turning black, salt, pepper, some chilli powder and garlic powder.

Please do not put lettuce in a guacamole

You can in principle add mayo or sour cream but I usually don't

Nothing screws up guacamole quicker than putting too much in it. I go for simple Taqueria-style -- some fresh garlic juice (mince a few cloves), fresh lime juice, avocados, and salt to taste. Nothing more is needed, assuming you have properly ripe avocados (I'm partial to the Haas variety). Tomatoes can make the guacamole too runny for my taste and I prefer the garlic to onions.

OMG, Jap Guacamole.. I wonder how that tastes..

Perfect! Altho' I use lemon juice over lime and, as in CH, have started using Aromat over salt... really works well
