Ok a good friend of mine gave me a packet of Quick Soak Dried peas a few weeks ago, and i have now soaked them for 2 hours and now want to cook them, and on the packet it say`s i have to add Sugar and Salt to taste, but it doesn`t say how much anyone please any idea how much i should add i don`t want to spoil the peas
If you could give the exact quantity of your peas you're having there, that might help Sutter to figure out how much salt/sugar you should add.

Cook the peas. When they're nearly ready add a pinch of salt. Taste. If you think they need more salt add a bit more. Repeat process until you think they are seasoned enough. Same with sugar tho' I never add that. I prefer to sprinkle a few drops of malt vinegar and pepper on mine after serving. People can always add more salt at the table. Salt to taste means what it says.

add a teaspoon, not too filled up of each, sugar and salt, and after about 5 minutes you check what it tastes like and then add some more if needed.
My gran used to to make fabulous mushy peas. She used to cook the soaked peas in chicken stock and then added some chopped mint. We used to eat them with fish and chips or pork pies. She told me never to salt the dried peas whilst they're soaking because they won't soften.
Failing fresh mint, a splodge of toothpaste will do. It works and will amaze your guests. Don't use anything blue though, as blue and green peas together make aquamarine. Which will confuse the fish.

And if you have no toothpaste you can always brush your teeth with cold mushy peas since it's bicarbonate of soda which makes 'em mushy.
I think you shouldn't add anything until the peas are cooked (the same with lentils) as the skins get tough!!
Or perhaps "quick-cook peas" don't have skins anymore??!
A word of caution. Open the windows tonight. Mushy peas will have you f*rting like demons!
The earlier you add the salt the less you will require!
Thanks guys maybe i should of started this thread this morning the peas turned out oh well we all learn from our mistakes . Hey but my daughter loved them (strange girl )
Not letting my husband near them (he`s still at work ) he would blow the duvet off the bed if he ate them
It would be a lot easier to buy frozen fresh peas, boil them for a minute in un-salted water, adding a knob of butter when serving and voila!
You do make things difficult for yourself sometimes...

I ordered some Batchelor's Mushy Peas from Britshop, and as no one else liked them, I ate them all myself.
