Irish Vegetable Soup

When i was in Ireland last i had this amazing vegetable soup (many places, same soup) that was creamy and smooth, no chunks and was often served with irish soda bread. I couldn't tell if the vegetables were pureed? or even what vegetables were used but it was so good! Does anyone have a recipe for this? pretty please?

Cream of Cauliflower, perhaps?

Not a big help really, no known vegetables and method unknown.

Potato and leek soup is popular here in the UK. I'm sure Delia has a good recipe for it.

I'm making roasted butternut squash soup today. With some ginger and chillie to liven it up.

Although potato and leek soup is good, it not what i had. It was very popular all over Ireland, almost every restaurant offerred it.

Can you look up the websites of the places you went to check their menus?

hmm, i've no idea where i was but mostly more pub style places than proper restaurants. if i recall correctly it was orangish in color.

Take whatever vegetables you have handy. In Ireland this equals..

Spuds

Carrots

Turnips

Onions

Leeks

Boil them up with water until mushy

Blend them till no solid bits left

Add cream, lots of.

Flavour with salt and pepper.

Eat with Soda bread and salted butter... yum.

This thread has given me a craving for cock a leekie soup for tonight. With dead chicken bits and leeks and onions and prunes.

Oh, I thought you were looking for a particular recipe for a particular irish soup.

That sounds like a good place to start, Magnamax. I would add a stock cube and less cream but that is just personal taste.

This is a simple Irish soup recipe.

1 cup chopped onions

1cup diced potatoes

2 cups of what ever vegi you want.

Prepare vegies, potatoes and onion. put a large knob of butter into a pan and gently saute the vegies on a low light with a lid on until softish, add a pint/half litre of chicken stock and simmer until vegies are really soft. Season to taste and blend. If desired add cream.

PS I don't add cream as the potatoes give a creamy affect.

Did it taste like Kürbis (squash/pumpkin) soup by any chance? It is very "in" at the moment!Not just in Switzerland -I mean available everywhere!

If not I'd certainly try the spuds and onions recipes above but with carrots or turnip for the orange colour.

This sounds more like it! I don0't think there was much (if any) cream in it, thats why it was so yummy and different than a normal cremed veggie soup.

This was not recently by the way, it was in 2006 or 2007.

My aunt makes a soup just like you describe. It's pretty much the veg on that recipe above but she doesn't put and cream or butter and I think in Portugal it would be a turnip & not a parsnip (unless they are the same (?)) and without leek. Apparently what makes it "irish" and yummy, is the butter.

If you stick with carrot, potato, turnip/swede/parsnip, a bit of onion or onion like veg (leek, scallion), and broth with a hand blender, you are on the right path.
