Lamb Kidneys

Anyone know of a source of these in CH?

Thanks

Small sheep

I seem to remember one of my local Turkish butchers sells lamb kidney - that might be your best bet if you have one around.

Coincidence! I found some veal kidneys in Migros yesterday and I just logged on to ask advice about how to cook them. It's the first time that I saw kidneys in Migros. I also recently saw heart for the first time, so maybe Migros are starting to sell offal.

Does anyone have advice about cooking kidneys? I checked a few online video recipes but they mostly started with individual kidneys. The first step is to remove the membrane, and the second step is to remove the fatty bit in the middle.

Veal kidneys are different because they come as a connected bunch. As far as I could tell, the membrane had already been removed, or maybe veal kidneys have no membrane? Also it seemed way to much trouble to remove the tiny white bits of fat so I fried the whole lot and ate them with bacon and mushrooms. Any advice or recipes about kidneys?

p.s. I am writing this at 6.50am because my wife hates bloody meat products, so offal experiments have to be done as early morning breakfast before she wakes up

Different animal. Different country. Different time. But other than that, totally on topic.

Whatever happened to pork chops with kidney attached that you'd get in the supermarket?

I used to be jealous because my dad always got the one with the kidney, but occasionally they'd get me on too.

Oh noes. I think I'm turning into Wollie.

Kidneys yam yam! Cut in small pieces, beat a couple of eggs, mix in pan, fry up everything together
