Given that this is Switzerland, food handeling and checks are the responsability of the canton. You need to, hence, contact the cantonal office.

Do I take it OP is using “fast food outlet” as a euphemism for his place of employment?
They were asking about banks looking for credit references last year. Is the “boss faking signatures” a euphemism for someone bypassing regulatory requirements?
In which case I daresay the employer should already have a whistleblowing setup in place and OP should use that.
Otherwise I am not sure what is expected from this thread and I would urge OP to avoid making potentially libelous statements about certain businesses.
