Hello all...I'm about to start a new diet which calls for Ezekiel Bread (in the US this is available at any whole foods store and is commonly used for low fat, no carbohydrate diets. I have been looking for something that approximates this type of flour/bread and it is difficult for me to find. If anyone has any tips, please let me know. Looking for the product (and word) in Geneva or in the greater Geneva/Lausanne area. Many thanks. Pindie
Spelt appears to be more widely used here, for a variety of foods, than in other lands. It is one of the oldest grains first cultivated by man.
In German, it is Dinkel; Googley translate spits out: épeautre, and spelt flour as: farine d'épeautre, for French.
My French is not so good, but I think it's right.

You can buy *farine d'épautre* in Coop or Migros. Personally I eat Essene Bread I buy in Organic shops (in Saint-Julien-en-Genevois, France). it's sprouted grain bread.

Migros sell a loaf called "Urdinkel Brot" which we like. So do Coop, but it is not IMHO as good by far.

Our local bakery also recently started selling a high protein bread, I think called "fit brot".
Of course these high/low are all relative terms rather often than absolute.

Both Migros and Coop sell spelt - or dinkel - flour. Why not invest in a breadmaking machine and bake your own?

Incidentally, I believe spelt bread in Geneva would be something like "P-A-I-N".
