Are there any fail-safe/good/interesting baking recipes which can be accomplished with a microwave oven?
Odd topic--but thought I'd throw it out there anyway.
I have to bake something for my research group, and not having an oven my options are limited to the microwave.
No, make two of whatever you're baking, go to your neighbour and ask if you can use their oven and in exchange give them the second item.
Found this for you. I've tried it before; it works. But don't know about making it in a big batch. Try using a glass casserole dish oiled with butter.
Would be a good idea, unfortunately:
1. I don't talk to my neighbors (at least the swiss half of me :P )
2. My neighbors don't have ovens either.

You can always prepare the mix, and cook it there, one each in an espresso cup, for that freshly baked effect!

Nigella Lawson has a fab steamed chocolate pudding which is designed to be made in the microwave - but this is intended as a hot pud eaten with cream, so will only be of use if you are feeding your research group at home.
Alternatively, why not make a digestive biscuit chocolate fridge cake? These are foolproof and yummy (disappear in minutes whenever I make one).
You just bash up digestive biscuits (available in Coop), and mix with melted butter. You stir in whatever you fancy eg. raisins, dried cranberries, bits of nuts, choc chips, etc, and press it into a tin and put in fridge to set. Then melt chocolate and spread over the top, and put in fridge again.
Cut into pieces and eat!!
Just had another thought, you could also make a fridge-set cheese cake (rather than a baked cheese cake), again with digestive biscuit base, and Philly cheese with sugar, eggs, cream,etc. for the filling.
I second this -- it can be assembled literally in minutes and tastes so good that you can not believe that it was made in a microwave. It is quite ok cold as well, but of course much better warm with some very cold thick cream .
