Need an alternative to vegetable oil

Greetings,

I have a recipe that calls for vegetable oil, what would be the best alternative? Sunflower oil, peanut oil? I would like to make oven fried chicken.

Any advice would be helpful.

Sunflower or Canola (rapeseed).

I use peanut oil to fry stuff, others are more *delicate* with hot temperatures.

Try meat oil, it's much better than the veggie version.

Definitely the best option. Peanut (groundnut) oil will withstand the hotter frying temperatures better.

For oven roasting Chicken, you shouldn't have any problem with just about any oil...deep-frying would be another story. Whatever oil you decide on, do consider a refined oil which will hold up a bit better than a non-refined oil. And for future reference...here are the smoke points (temperature which oil burns) for various oils...

Safflower 265 degrees C

Sunflower 246 degrees C

Soybean 241 degrees C

Canola 238 degrees C

Corn 236 degrees C

Peanut 231 degrees C

Sesame 215 degrees C

Olive 190 degrees C

Lards 183 to 205 degrees C

good ol' common sense is the answer.

The hotter you need to cook the meat on, the highest the temperature.

So, if the temperature is going high in the oven for a long time - you may want an oil that can go up to that.

Now, in your recipe above, the oil is only a coating. THe spray contains chemicals and lots of ****, but you are better off if you pick any good oil - say a sunflower oil - and use a brush (silicone ones wash in the dishwasher, last for a loooong time, and come for about 10 CHF at local Migrosh or Goop supermarkets) instead, to coat your chicken.
