I have a recipe that calls for vegetable oil, what would be the best alternative? Sunflower oil, peanut oil? I would like to make oven fried chicken.

good ol' common sense is the answer.
The hotter you need to cook the meat on, the highest the temperature.
So, if the temperature is going high in the oven for a long time - you may want an oil that can go up to that.
Now, in your recipe above, the oil is only a coating. THe spray contains chemicals and lots of ****, but you are better off if you pick any good oil - say a sunflower oil - and use a brush (silicone ones wash in the dishwasher, last for a loooong time, and come for about 10 CHF at local Migrosh or Goop supermarkets) instead, to coat your chicken.
