Any recipes? Have you a favourite way to make Quinoa? Savory or sweet?
I like cooking it with warm spices: chopped onions, garlic and ginger, diced courgettes, peppers cooked in ghee/oil with added garam masala, coriander, cumin, fenugreek and chilli. Stir in a batch of cooked quinoa, a handful of peas and a bay leaf with a couple of star anise for extra flavour.
Very nice warm or cold in a salad as it keeps well in the fridge for a couple of days.
1. Toss quinoa, chicken, mango, avocado, cilantro, onion, and shredded coconut together in a large bowl.
2. In a small jar or container whisk together olive oil, fresh lime juice, honey. Pour over salad and toss to coat evenly. Season with salt and pepper to taste. Chill for 1-2 hours before serving.
3. Squeeze a little extra fresh lime juice before serving if desired.
For a long time my fast and easy staple dinner was quinoa with some sautéed onion, garlic, and hot pepper- along with avocado, then topped with nutritional yeast, Braggs (soy sauce), and sriracha. Scooped up with blue corn tortilla chips. mmm
Also nice is quinoa stuffed onions, (though a challenge here in CH with such tiny onions available) and peppers, too. The sky's the limit with flavoring, you could basically do them in any style you like with what you've got in the cupboard. Add some toasted walnuts or sunflower seeds for more texture.
I often add it to roasted veggies, like butternut squash and courgettes and red onions tossed with balsamic vinegar and a bit of olive oil then crumbled feta on top. Roast the veggies with indian or middle eastern spices and some dried chili for a different flavour, with a minty yoghurt dressing. I'm hungry now.
Some good ideas here to try! My favourite is a kind of quinoa risotto:
Fry a little bit of finely chopped onion until soft.
Add a cup of rinsed quinoa and two cups of chicken broth (could also use vegetable broth). Cook until all liquid is absorbed and quinoa is cooked (about 15 minutes usually)
Add lemon juice to taste - I use about 1/2 of a lemon plus a couple of tablespoons of grated parmesan cheese and stir well.
Being gluten intolerant, I have struggled to find a carb to go with meals which is light and versatile. Potatoes, rice, gluten-free pasta are all good, however, they're heavy going to eat day after day. Quinoa is really light and very calming on the tummy. Full of nutrients too make it a healthy choice, I guess. I am now a big fan after years of not really bothering too much with it.. thought it to be more of a fad than a sound food option.
One thing for sure it's very expensive - I now buy mine in bulk as it's so much cheaper. One of my kids loves it; the other looks at it, makes a face and says: no thanks!
