I just made pesto this morning. Take a huge bunch of fresh basil, olive oil, a bit of parmesan, a bit of pecorino, salt and a clove or two of garlic and blitz. Take 30 seconds to make.

remember, after draining the pasta, return it to the warm pot and stir in the pesto while over the heat. I recommend spaghetti for this.

and any recipes for tomato or cheese sauce quick and easy ?

- Salmon : Smoked salmon, cream and a little dill. Just toss into the pasta (break up the salmon into bite-sized pieces first) and serve immediately.

- Sort-of-Carbonara : chop some ham, mix with egg yolk (you can also use the eggwhite if you don't want to throw it or freeze it), some cream and a large spoon of grated parmesan cheese. Toss into the drained pasta, stir and serve immediately.

Re dissertation, I did 2 sometime ago for 2 degrees and it was so stressful and time consuming , I feel for you , what is the subject ?

Use a can of (if you can find them) San Marzano tomatoes. If not, normal can of chopped tomatoes will do.

Take olive oil, put in pan. Chop an onion and heat this in the oil gentle until in turns transparent, not brown - 3 minutes or so. Add one clove of chopped garlic, heat for 1 more minute. Add the can of tomatoes and one tablespoon of tomato paste. Simmer very gently until it looks think like pasta sauce (15 minutes or more, stir every 5 minutes). When it's ready, turn off the heat and add a handful of roughly torn up basil leaves, salt and pepper and stir in. Again, as will almost all pasta sauces, mix the sauce and pasta together in the pot under a bit of heat. For best results, buy pasta that is a little rough, not shiny and smooth.

This is the basic tomato pasta recipe. You can experiment by adding, olives, anchovies, capers, meatballs (just brown off separately in a pan under high heat with a little vegetable oil, then add to the sauce to finish cooking).

I do a quick sauce with olive oil, garlic, and goat cheese. sort of modified mac & cheese.

I sprinkle some parmesan before serving as well....I like some crushed red pepper also, but some kids won't like the spice.

my husband likes it with feta.

Oh, and the ultimate instant pasta recipe when you have no time and have bought nothing (though not for more kids) is aglio olio e peperoncino

just garlic, olive oil (good quality, don't heat it too much) and chilli peppers. Add a touch of salt and you're done - delicious!

Having said that the quality of this dish is more dependant on the quality of the ingredients than other more "prepared" pasta dishes.

If you're feeling adventurous and have a couple of minutes more to spare you could always grate in a raw carrot or zucchini to the tomato sauce above. Just don't do it when the children are watching

I've been buying whatever I find at Migros. just bought some today at Coop, and I expect as long as it's fairly mild it will work fine.

Now this is a great suggestion. Feeding veggies to the kids should always be a priority !

Oh the same theme, tomato sauce hides all veg - get your blender out and you can fit their full 5 a day into a plate of pasta - also try spinach, squash and brocolli.

Here is a quick and dirty recipe that I use for bolognaise sauce. It can be done in 30-45 minutes tops. What you'll need:

1. Ground beef from either Coop or Migros

2. Tomato puree (yes those tube ones) X 2

3. 3 Fresh tomatoes chopped

4. 3 fat garlic cloves chopped

5. 2 onions chopped

6. FRESH basil leaves (about 6-7 leaves will do the trick if you are cooking for 1-2 people)

7. Black pepper

8. Sea salt

Steps:

1. Fry the garlic and onion with extra virgin olive oil on low heat.

2. 300 ml of water on low heat and empty the 2 tubes of puree into it. Mix well and keep adding water till you are satisfied with the texture. Dont let it get too watery.

3. Add the basil - the leaves will infuse into the mixture and give it its 'herb' taste.

4. Season your ground beef with salt and black pepper and fry it on low heat till its about 80% cooked. Adding it into the mixture will complete the cooking of the beef.

5. Add the semi cooked beef and chopped tomatoes into the sauce and let it simmer for about 30 minutes max. The beef will be fully cooked by then.

6. During this 30 minutes, season the sauce with black pepper and salt till you are satisfied with the taste. I cant say how much salt / pepper to add as it really depends on individual tastes.

If you have the time, simmer the sauce for longer and make your own meatballs.

ok, I don't cook for kinds but if i did i'd make this... healthy and not-too-messy

3 courgettes

2 cloves of garlic

cream

parmesan

olive oil

butter

salt/pepper

easy peasy, slice the courgettes and the garlic very finely, melt a knob of butter and a slug of olive oil (those famous chef's quantities ) in a frying pan and, over a low heat, add the courgettes and garlic. Cook for about 30 mins stirring occasionally (you can get the kids to do it while you have a relaxing bath+glass of wine ), once the courgettes are almost "melted", season with salt and pepper and then stir in the cream. turn up the heat to reduce the consistency, cook the past and then stir the sauce into the pasta. grate a large amount of parmesan over it before serving (nom nom nom...) enjoy!

My kids are fussy, but they like this tomato sauce, which is completely smooth (and also perfect for pizza);

Embarrasingly easy, and maybe to simple to post?

1. Grate onion (very finely) and fry gently until soft. (My kids don ́t like garlic, otherwise I would add that too.)

2. Mix in 500g of tomato purée (not the conc), and add a squeeze of the conc tomato purée as well.

3. Add a 1-2 tsp of honey,

a very small squeeze of lemon juice and

some boullion powder and finely chopped basil. Let it simmer.

Serve with spaghetti and grated cheese (my kids will only have cheddar )

My kids' favorite pasta is also my laziest dinner stand-by. While pasta is boiling (penne or farfalle, I find are easiest for little kids to manage), open a can of tuna. Drain the pasta, add some frozen peas and frozen sweetcorn (or canned). They will cool the pasta slightly while they defrost. Mix in the tuna and a couple of spoons of mayonnaise. That's it. Carbs/protein/veg and all in 15 mins. My kids like it so much I use it as a way to introduce new veggies. 'Well you ate it last night in the tuna pasta"...

Instead of mayo, chuck in some left over tomato sauce (as above), put everything in an oven dish, grate cheese on top and you've got a nice bake.
