Ris de Veau - Recipe ?

Greetings foodies,

I bought some Ris de Veau, Veal Sweetbreads, the other day from Migros. Honestly I was surprised to find them on sale there. Or should I not be?

Would any one have a smashing recipe for them? I have a simple one where they are poached, then coated in seasoned flour and pan fried. Any else come to mind? I absolutely love them, think they're delicious.

I am not a big sweetbread fan. I have cooked many Emeril Lagasse recipes off the Food network Web site, and they all turned out rather well.
