That is why they are very rare and protected.

I hasten to add that i have never eaten turtle soup, nor would i ever. If i was in a restaurant with turtle soup on the menu i would immediately leave in disgust and if i was invited by a friend to a turtle soup dinner, that friendship would cease to exist.
You could always try mock turtle soup. I think it used to be quite popular at one time. Had to look up what it is. Oxford Dictionaries says it’s “imitation turtle soup made from a calf’s head”.
