Sourdough Heaven!

While on my way to someplace else, I stumbled across the best sourdough I’ve ever had in Switzerland.

This is a small artisanal bakery, making several types of sourdough bread - white, dark, half/half. This is the real deal: dense, chewy, perfect crunchy golden crust. Certainly stands up to the sourdough bakeries I loved back home. First bite was a full on Proust’s madeleine moment.

If you are craving that dense chewy goodness, a trip to Sattel is well worth it. Sattel is a good jumping off point for Zentralschwyz hiking, by the way.

As for my not really humble reply :wink: I have yet to find a bakery that matches my own sourdoughs which are mostly modeled after these two books:

As I am writing this, I just about an hour ago fed my levain for a planned – first time ever – white sourdough with dried tomatoes that I’ll be baking this Sunday morning.

Stopped by their shop on Wednesday, was there at about 10:30am. They were already sold out!
Ah well … I’ll try again.

If anyone else wants to visit them, I’d strongly recommend to make a reservation (which I’ll do next time). Of course too bad you can’t first see all their breads and select one by eye … I suppose getting up very early and showing up first thing in the morning might work, too.
