is it correct to say that shorting call/put just for hedging own assets won't get you considered a professional trader and that the premiums paid by those trades are not considered for income taxes but only for wealth taxes?
I couldn't manage to find anything official on that.

I think that's correct. I don't trade options myself, though.
The relevant criterion in the "Vorprüfung" in Kreisschreiben 361 is:
I.e. trading options solely for hedging your own positions won't trigger reclassification as professional trader. To be safe, you need to fulfill the other 4 criteria as well, though.
"3.3 Derivative Finanzinstrumente" in Kreisschreiben 152 says:
I.e. option premiums are not subject to income tax. Profits from option trading are considered capital gain, which is tax free as private investor.
