I’ve got a recipe that calls for Stilton, and with no chance of getting down to the British Cheese Centre today I was wondering if anyone knows of a reasonable Swiss cheese that I could substitute in for it? Both for white and blue if possible? Thanks!
Nothing tastes like Stilton, but Roquefort is also strong and tangy, so canl be an adequate substitute in many recipes. French, of course, but you can't blame it for that.
It also freezes well in terms of flavour, but becomes very crumbly, which is generally OK for cooking but hard to get it to stay on a cracker - so I have to resort to loads of butter as well
Most Migros and some Coops have a basic Blue Stilton, certainly good enough for cooking with. Jelmoli and Globus also have Stilton (Jelmoli sell my Cropwell Bishop Bio - so that is best of course)
Otherwise, look out for Bluechatel (made in Neuchatel). The guy who makes it spent a few months at a Stilton dairy learning how to make blue cheese so it's a similar style.
Gorgonzola is too creamy and mild, Roquefort is made with sheeps milk and a very different flavour.
But my favourite Swiss cheese is Blaues Wünder Bio. Nothing like Stilton really but a lovely flavour, dense yet creamy paste and quite tangy. But too good to cook with!
Bleuchâtel is indeed very nice, Mike - had no idea the guy had spent time in Stilton country (well not Stilton, as Stilton has never been made in Stilton )...
Our local cheese shop often has great Stilton for sale, we are lucky. And it is one of the things we always bring back from UK.
If I had to make a subsititue (and truly nothing can) I'd go for Bleu de Gex from nearby Franche-Comté.
Bleu d'Auvergne remains (hands down) my favourite blue cheese... I haven't seen it in Migros or Coop but if you're close to Seefeld try Chäslaube... excellent fromagerie.
