Swiss rabbit recipes

Hello all;

Anyone have a good Swiss recipe for rabbit? Just got two that had been terrorizing my veg patch for weeks.

Morg

How to make one for a hat trick?

a Morgannon pie might be nicer, we've had one of the pesky b uggers terrorizing the forum the past few weeks

No no no, Morgannon... the Swiss method of pest control, as practiced by my neighbor, is as follows:

Fence in a portion of your property, approximately 200 m2.

Plant lawn in salad greens, not grass.

Install state-of-the-art rabbit hutch

Happy Bunnies.

It seems to work, as his veggie patch is a thing of beauty.

Um...........

How is America going to end?

oooh Morg and here i was thinking you were this gun wielding gung ho menace but you have got a heart after all for soft fluffy things - actually we may have a new fluffeh contender

Yeah, I broke that vow. Bad me. I just couldn't stand watching the little darlings eat my veggies.

Anyway, how about a recipe?

Morg

I'm a vegetarian. I stand by my principles. So no recipes from me.

Hehe, good idea, and I did try that - I planted lettuce rows near the spot where they have been nesting. Unfortunately, they decided that lettuce was just not as tasty as the lettuce I had planted for my family.

Once hunting season is here, there's a deer prowling around with my name on it. He's partial to my radicchio, the cheeky bugger.

But I still need a bunny recipe.

A thousand apologies, I was asking the public at large - not you personally.

Morg

Hi Morgannon,

Did you really kill those sweet little creatures? Noooo! They might have thought they were welcome in your garden. I would love to have the bunnies in my garden, except that probably my cats think otherwsie.

Anyway, although I am sad for the poor bunnies, I will give you a rabbit recipie cos it is the traditional food in my coun try so I am very used to cooking them. There are varoius ways of preparing rabbit so I will give you my favourite 2.

You can place some olive oil in a pen, cut the rabbit into quite large pieces, add thyme, salt, pepper, white wine (not sweet) and fresh garlic pieces. Cover the pan and fry on very low fire turning the rabbit over every now and then.

The second one: Cut rabbit into pieces, place in a pot with peas, carrot rings and potato chunks, salt, pepper, olive oil and hot water (not too much). You can add red wine according to your preference. Cover pot and cook gently.

Bon appetito..... I almost feel guilty about it, but now that they are not alive any more, it is a pity to throw them away.

Chüngel (rabbit) is quite popular both in Switzerland and in Northern Italy. Here a recipe _:

Chüngel auf Peperoni

Source: http://www.beobachter.ch

1kg Kaninchenstücke; oder ein ganzes Kaninchen = 1 kg parts of a rabbit or a whole rabbit 600g Peperoni = 600 g peperoni 2 Chilischoten = 2 pods of chili (paprika for example) Salz = salt Pfeffer = pepper Mehl = flour 50g Butter 50 g butter 2 grosse Zwiebeln; gehackt = 1 big onions, chopped 3dl Bouillon = 3 dl of bouillon nature 2 dl Weisswein = 2 dl of white wine 1 Lorbeerblatt = 1 pc of laurel Thymian = Thymian Petersilie = parsley

Zubereitung: = preparation

Peperoni in Streifen schneiden, Chili fein hacken. Die Kaninchenstücke

mit Salz und Pfeffer würzen, im Mehl wenden = Peperoni to be cut into stripes, the chili be chopped finely. The pieces of rabbit spiced with salt and pepper and be turned around in the flour

Butter in der Pfanne erhitzen und das Fleisch von allen Seiten

anbraten. Wieder herausnehmen. = Butter to be warmed in the pan, and the meat to be roasted from all sides -- and to be taken out again

In der gebräunten Butter Zwiebel, und Peperoni

anschwitzen. Chili dazugeben. Während zehn Minuten dünsten. = let's heat, in the browned butter, onion and peperoni, and add the chile to it. Cook it for 10 minutes.

Die Kaninchenstücke einlegen, Kräuter und Bouillon dazugeben und zehn

dreissig bis vierzig Minuten garen. = to put the white wine to it and have it cooking for 40 minutes

Mit Polenta oder Reis oder Nudeln servieren. = to be served with polenta or rice or noodles

I did kill them - trust me, I didn't do it lightly. I've tried lots of methods to deter them from getting in my garden, but they just keep going for my salad greens. I love little bun buns too, but if I hadn't taken care of the problem there were gonna eat all my greens. I tried trapping them in a cage to take away, but they refused to get in.

They didn't suffer, I promise.

Those recipes sound delish...I think I am going to try the second one because I'm a big red wine stew fan, and so's the wife.

Thank you!

Morg

I didn't know one can make apple pie with rabbits

Please state the source of your recipe and don't hotlink all these images!

Thank you for the translation too - I think I'll try this if it's not too spicy (I've got a delicate stomach lol).

Morg

I was wondering what the first photo was lol...and the second cut of meat. I was like...that looks great, but it doesn't look like rabbit lolol.

Morg

Sounds yummy!

For Morg - note that "peperoni" here refers to bell peppers (as opposed to American "pepperoni", which is a kind of salami.)

OOPS!

*Morgannon breathes fire*

Burp!

I thought that was kinda spicy

No, the photos have nothing to do with the meal, but to delete the photos (what I tried at the beginning) resulted in the text also becoming deleted.

Since you were having trouble editing the recipe, I've done it myself I also think none of the photos were rabbit
